Honey-Dijon Pork Loin Chops with Button Mushrooms

Ingredients

  • 4 3/4-inch-thick boneless pork loin chops, fat trimmed
  • 1/3 cup honey-Dijon mustard
  • 4 cups small button mushrooms, sliced

Make It

1. Heat 1 tablespoon olive oil in a large nonstick skillet over medium heat. Season chops with salt and pepper. Add chops to skillet and cook for 2 minutes on each side or until lightly browned.

2. Stir in mustard and mushrooms. Cover and cook for 8 minutes, turning frequently. Serve.
