  • 3 tablespoons paprika
  • 1 teaspoon cumin
  • 1 teaspoon cayenne
  • 1 teaspoon allspice
  • 1 1/2 teaspoons salt
  • 2 tablespoons light-brown sugar
Pork and Rice:
  • 6 center-cut boneless pork chops (4 ounces each)
  • 2 cups long-grain white rice
  • 1 15 ounce can kidney beans
  • 1 10 ounce package frozen corn, thawed
  • 2 scallions, sliced

Make It

Cajun rub:

1. Combine paprika, cumin, cayenne, allspice, salt and sugar. Reserve 1 teaspoon rub.

Pork and rice:

2. Sprinkle remaining rub on both sides of pork. Let stand 20 minutes. Bring 4 cups water to a boil in large saucepan. Add rice and reserved teaspoon rub. Cover; simmer 20 minutes. Drain and rinse beans; add to rice along with corn and scallions. Cover and cook 5 more minutes.

3. Meanwhile, prepare grill with medium-hot coals or heat gas grill to medium-high. Grill pork for 4 minutes per side or until an instant-read thermometer registers 160 degrees F. Serve with rice on the side.
