Corn-Bread-Coated Pork Chops

  • 1 box (6 ounces) corn-bread stuffing with seasoning packet
  • 1/2 cup chopped fresh parsley
  • 4 center-cut pork chops, cut 3/4 inch thick (about 2-1/4 pounds)
  • 1/4 cup low-fat yogurt

Make It

1. Whirl together briefly corn-bread stuffing and parsley in food processor just until slightly ground. Combine the stuffing and stuffing seasoning packet, if included, in a shallow baking dish and spread out evenly.

2. Brush both sides of chops with yogurt. Dip the chops in stuffing mixture to coat thoroughly. Place on greased baking pan.

3. Bake in preheated 400 degrees F oven for 45 to 50 minutes or until a meat thermometer inserted in the thickest part of the chops registers 160 degrees F. Decorate as an animal and serve with green beans and baby carrots if you wish.
