1. Heat oil in a nonstick skillet. Rub pork chops with 1 teaspoon Cajun seasoning; cook 4 minutes on each side. Remove chops to a plate.
2. Add onion and green pepper; cook 8 minutes. Stir in black beans, Mexicorn, cilantro and 1/2 teaspoon Cajun seasoning.
3. Add chops and cook 3 additional minutes.
