Serve this vegetable, ham, and cheese quiche recipe for brunch or dinner. Use refrigerated piecrust for a fast fix-up.
1. Heat oven to 350 degrees F. Fit piecrust into 9-inch pie plate and flute edges; set aside.
2. In a medium-size bowl, whisk together eggs, egg whites, broccoli, 1/2 cup of the cheese, the ham, scallions, salt and pepper. Pour egg mixture into prepared piecrust and sprinkle with remaining 1/4 cup cheese.
3. Bake on lower rack at 350 degrees for 35 minutes or until just set. Allow to sit 5 minutes before serving.
