Bacon-Stuffed Potatoes & Salsa

Ingredients

Potatoes:
  • 4 potatoes
  • 3 strips cooked bacon, chopped
  • 1 tablespoon butter
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup milk
  • 4 ounces shredded cheese
Salsa:
  • 1 ounce can diced tomatoes, drained
  • 1/4 cup black olives, chopped
  • 3 tablespoons chopped red onion
  • 2 tablespoons parsley, chopped

Make It

Potatoes:

1. Bake potatoes in 350 degrees F oven about 40 minutes. Scoop out flesh, leaving 1/4-inch-thick shells. Mash flesh in bowl; add bacon, butter, salt, pepper and milk. Spoon into shells. Top with shredded cheddar. Bake 5 minutes.

Salsa:

2. Combine tomatoes, black olives, red onion and chopped parsley in bowl. Serve salsa with baked potatoes.
