Asparagus-Ham Souffle

  • 1/2 pound asparagus
  • 1 7 1/4 ounce box macaroni and cheese
  • 2 egg yolks
  • 1 tablespoon mustard
  • 1/2 cup milk
  • 1/4 cup butter
  • Seasoning mix (from macaroni and cheese)
  • 3 ounces diced smoked ham
  • 2 egg whites

Make It

1. Heat oven to 350 degrees F. Clean and slice 1/2 pound asparagus.

2. Cook one 7.25-ounce box of macaroni and cheese following package directions and reserving seasoning mix. Add asparagus to macaroni water after 3 minutes of cooking. Continue cooking until macaroni and asparagus are just tender; drain.

3. Combine egg yolks, mustard, milk, butter, seasoning mix and diced smoked ham in large bowl. Add hot cooked macaroni. Beat egg whites in medium-size bowl until stiff peaks form; fold into macaroni mixture.

4. Pour into buttered 2-quart baking dish. Bake in 350 degrees F oven 20 to 25 minutes.
