Cook onion and apple in nonstick skillet with 1 tablespoon olive oil over medium-high heat 5 minutes, stirring, until softened. Add 1-3/4 cups water and bring to a boil. Stir in stuffing and 1/4 teaspoon salt. Place stuffing in microwave-safe bowl.
Cut slits in chops. Fill each with 1/4 cup stuffing. Season chops with 1/4 teaspoon salt and 1/8 teaspoon black pepper.
Wipe out skillet; heat 1 teaspoon olive oil over medium-high heat. Add chops; saute 5 minutes on each side. Add 1/2 cup water; cover, simmer on medium-low for 10 minutes. Meanwhile, microwave carrots as package directs. Warm stuffing in bowl in microwave. Stir in carrots and glaze. Serve chops with stuffing. Spoon cooking liquid on top.
