Apple-Herb-Stuffed Pork Chops

  • 1 red onion, chopped
  • 1 Granny Smith apple, cored and chopped
  • 4 cups herbed stuffing mix (from 16-ounce package)
  • 4 thick-cut pork chops (2-1/2 pounds total) about 1-1/2 inches thick
  • 1 package (10 ounces) frozen honey-glazed carrots

Make It

1. Cook onion and apple in nonstick skillet with 1 tablespoon olive oil over medium-high heat 5 minutes, stirring, until softened. Add 1-3/4 cups water and bring to a boil. Stir in stuffing and 1/4 teaspoon salt. Place stuffing in microwave-safe bowl.

2. Cut slits in chops. Fill each with 1/4 cup stuffing. Season chops with 1/4 teaspoon salt and 1/8 teaspoon black pepper.

3. Wipe out skillet; heat 1 teaspoon olive oil over medium-high heat. Add chops; saute 5 minutes on each side. Add 1/2 cup water; cover, simmer on medium-low for 10 minutes. Meanwhile, microwave carrots as package directs. Warm stuffing in bowl in microwave. Stir in carrots and glaze. Serve chops with stuffing. Spoon cooking liquid on top.
