Apple-Cabbage Pork

Ingredients

  • 4 teaspoons vegetable oil, divided
  • 1 small onion, chopped
  • 1 bag (16 ounces) coleslaw mix
  • 1/3 cup raisins
  • 1 large red apple, cored and sliced
  • 1/4 teaspoon cinnamon
  • 1 cup chicken broth
  • 1 tablespoon cider vinegar
  • 1 pork tenderloin, cut into 8 slices
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper

Make It

1. Heat oven to 350 degrees F. Heat 2 teaspoons oil in large nonstick skillet over medium-high heat. Add onion; cook until soft, about 5 minutes. Stir in slaw mix, raisins, apple slices, and cinnamon. Pour broth over fruit and vegetables, and increase heat to high; cover and cook 5 minutes. Stir in vinegar. Transfer to large baking dish. Wipe skillet clean.

2. Sprinkle pork with salt and pepper. Heat remaining 2 teaspoons oil in pan, add pork, and brown 2 minutes on each side. Transfer to baking dish, nestling slices in slaw mix. Cover with foil, and bake 15 minutes. Makes 4 servings.
