Heat oven to 350 degrees F. Heat 2 teaspoons oil in large nonstick skillet over medium-high heat. Add onion; cook until soft, about 5 minutes. Stir in slaw mix, raisins, apple slices, and cinnamon. Pour broth over fruit and vegetables, and increase heat to high; cover and cook 5 minutes. Stir in vinegar. Transfer to large baking dish. Wipe skillet clean.
Sprinkle pork with salt and pepper. Heat remaining 2 teaspoons oil in pan, add pork, and brown 2 minutes on each side. Transfer to baking dish, nestling slices in slaw mix. Cover with foil, and bake 15 minutes. Makes 4 servings.
