  • Coat slow cooker bowl with nonstick cooking spray.

  • Place pork chops in slow cooker; season both sides with oregano, cumin, salt and black pepper. Add 1 1/2 cups of the salsa, the red pepper, cilantro, scallions and garlic.

  • Cover and cook on HIGH for 3 hours or LOW for 5 hours.

  • Remove pork and shred with 2 forks. Return meat to slow cooker. Stir in remaining 1/2 cup salsa.

  • Serve pork in taco shells topped with garnishes, if using.

For easy cleanup:

Line your slow cooker with a disposable slow cooker liner. Add ingredients as directed in recipe. Once your dish is finished cooking, spoon the food out of your slow cooker and simply dispose of the liner. Do not lift or transport the disposable liner with food inside.
