Avocado Salsa Pizzas

Tomato, corn, and cheese are baked on the pizza and then fresh avocado slices are added on top for a fast and fresh dinner.

Avocado Salsa Pizzas
Yield: 4 mini pizzas


  • 1 chopped tomato
  • 1/4 cup corn
  • 1/4 cup shredded Monterey Jack cheese
  • 1 tablespoon lime juice
  • Salt
  • Black pepper
  • Avocado slices

Make It

1. Mix together tomato, corn, cheese, lime juice, salt and pepper. Spread on 4 mini pizza crusts (see Basic Pizza Dough recipe on www.parents.com); bake for 8 minutes at 425 degrees F. Top with avocado slices after baking pizzas.
