Pineapple Pico de Gallo

  • 1/2 cup thinly sliced green onions
  • 3 tablespoons chopped fresh mint
  • 3 tablespoons chopped fresh cilantro
  • 3 tablespoons freshly squeezed lime juice
  • 1 tablespoon seeded and finely chopped fresh jalapeno pepper, or to taste
  • 1 tablespoon olive oil
  • 1/8 teaspoon salt, or to taste
  • 4 cups finely chopped fresh pineapple (1 large)
  • Tortilla chips, for serving

Make It

1. In a medium bowl, mix the green onions, mint, cilantro, lime juice, jalapeno, olive oil, and salt. Add the pineapple and toss well. Taste for salt, adding more if needed. Serve with tortilla chips.
