  • Place chicken and next seven ingredients (through bay leaf) into a gallon size ziptop bag. Seal the bag and shake all of the contents around to fully coat the chicken. Refrigerate for at least an hour or overnight.

  • Soak ten 8-in. wooden skewers in water for 30 minutes. (Snip off pointy ends if serving to young kids.)

  • Toss zucchini and tomatoes with olive oil in a medium bowl. Thread 4 marinated chicken pieces onto skewers; add 2 to 3 vegetables on both ends. Cook on hot grill, turning periodically for about 15 minutes, or until chicken reaches 165°F when checked with a food thermometer. Baste skewers with Guava BBQ Sauce during the last 5 minutes of grilling. Serve with additional BBQ Sauce.

Make the Guava BBQ Sauce:
  • Sauté a minced shallot in 2 tsp. olive oil for 1 to 2 minutes over medium heat in a small saucepan. Whisk in 1/4 cup water and 3 1/2 oz. guava paste until dissolved. Stir in 1/2 cup tomato sauce, 2 tsp. apple cider vinegar, 2 tsp. soy sauce, 1 tsp. each chili powder, garlic powder, dried oregano, and cumin, plus 1/2 tsp. each ground coriander and onion powder. Season with a dash of black and cayenne peppers. Cook over medium heat until sauce has thickened, 8 to 10 minutes. Remove from heat and stir in a squeeze of lime juice. Makes about 1 1/4 cups. Store extra in an airtight container in refrigerator for up to a week.


Leftover Guava BBQ Sauce can be stored in an airtight container in refrigerator for up to 1 week.
