Jo Beard's Chess Pie

Jo Beard's Chess Pie

  • 1 ready-to-use rolled-out piecrust
  • 1 1/4 cups sugar
  • 1 tablespoon fine-ground white cornmeal
  • 1/2 cup (1 stick) butter, melted and cooled
  • 4 eggs
  • 1 tablespoon white distilled vinegar
  • 1 teaspoon vanilla
  • 1/8 teaspoon salt

Make It

1. Heat oven to 350 degrees F.

2. Unfold piecrust; fit into 9-inch pie pan.

3. Mix sugar and cornmeal in bowl. Stir in butter, eggs, vinegar, vanilla sand salt. Pour into pie shell.

4. Bake in 350 degree F oven 45 minutes or until set. If top starts to brown, lightly cover with foil about halfway through baking. Cool pie completely on wire rack. Makes 8 servings.
