This pie recipe tastes more like cheesecake than a traditional Key lime pie. The filling is made with cream cheese and whipped topping, but has plenty of tart lime to satisfy devotees of the Florida specialty.
1. Heat oven to 325 degrees F.
Crust:2. In bowl, mix crumbs, sugar and cinnamon. Stir in butter. Press into 9-inch glass pie plate.
3. Bake in 325 degrees F oven until edges are lightly golden, 10 minutes. Let cool.
Filling:4. In bowl, beat cream cheese, sugar, lime rind and juice until fluffy, 3 minutes. Fold in topping. Spread into crust. Refrigerate until firm, 4 hours. Garnish with lime slices.
