Citrus Icebox Pies

  • 1 envelope (1.3 ounces) whipped-topping mix, such as Dream Whip
  • 1/2 cup cold milk
  • 1 can (14 ounces) fat-free sweetened condensed milk
  • 1/2 cup lemon juice
  • 1 teaspoon grated lemon peel
  • 3 - 4 drops yellow food coloring
  • reduced-fat graham-crumb crust (6 ounces)
  • Cool Whip
  • Lemon slices

Lemon Icebox Pie

1. In bowl, with electric mixer on low, combine whipped-topping mix and cold milk. Increase speed to high and beat 4 minutes. In large bowl, whisk together sweetened condensed milk, lemon juice, and lemon peel. Whisk in whipped topping. Blend in yellow food coloring. Pour mixture into crust and freeze. Flip the plastic cover from packaging for a lid. Garnish with Cool Whip and fruit slices.


Lime Icebox Pie
  • Follow lemon-pie directions, substituting 1/2 cup lime juice, 1/4 teaspoon grated lime peel, and green food coloring for the lemon juice, lemon peel, and yellow food coloring.
Orange Icebox Pie
  • Use a chocolate-crumb crust (6 ounces). Follow lemon-pie directions, substituting 1/4 cup lemon juice; 3 tablespoons frozen orange juice concentrate, thawed; 1/2 teaspoon grated orange peel; and red and yellow food coloring.
