Preheat oven to 200°F. Line a baking sheet with parchment paper. In a shallow dish stir together the eggs, milk and salt with a fork. Place the chopped pecans in another shallow dish and mix with cinnamon.
Dip the bread slices, one at a time, in the egg mixture, turning once, allowing excess mixture to drip off. Place in the pecan mixture and turn to coat, pressing in slightly.
Coat a griddle or large skillet with cooking spray and heat over medium heat. Cook bread slices, in batches, about 2 minutes per side or until browned. Remove to prepared baking sheet and keep warm in oven while cooking remaining batches.
Serve warm drizzled with maple syrup and a spoonful of cherries, if desired.
