Pecan-Crusted French Toast

Pecan-Crusted French Toast
Servings: 8 Prep 20 mins Cook 2 mins per batch

  • 3 eggs
  • 1/2 cup milk
  • 1/4 teaspoon salt
  • 1 1/4 cups finely chopped pecans
  • 1 teaspoon ground cinnamon
  • 8 slices whole grain bread
  • Nonstick cooking spray
  • Maple syrup (optional)
  • 1/2 cup frozen pitted cherries, thawed (optional)

Make It

1. Preheat oven to 200 degrees F. Line a baking sheet with parchment paper. In a shallow dish stir together the eggs, milk and salt with a fork. Place the chopped pecans in another shallow dish and mix with cinnamon.

2. Dip the bread slices, one at a time, in the egg mixture, turning once, allowing excess mixture to drip off. Place in the pecan mixture and turn to coat, pressing in slightly.

3. Coat a griddle or large skillet with cooking spray and heat over medium heat. Cook bread slices, in batches, about 2 minutes per side or until browned. Remove to prepared baking sheet and keep warm in oven while cooking remaining batches.

4. Serve warm drizzled with maple syrup and a spoonful of cherries, if desired.
