Peach and Blueberry Cobbler

There is no need to peel the peaches for this delicious summer classic. No fresh fruit on hand? Frozen peaches and blueberries are a good alternative in this recipe.

Peach and Blueberry Cobbler

  • Cooking spray
  • 6 cups sliced peaches
  • 3 cups blueberries
  • 3/4 cup sugar, divided
  • 2 teaspoons orange zest
  • 1/4 cup cornstarch
  • 1/2 cup orange juice
  • 1 cup all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 2 tablespoons sugar
  • 1/4 teaspoon salt
  • 4 tablespoons chilled unsalted butter, cut into pieces
  • 1/3 cup whole milk

Make It

1. Preheat the oven to 400 degrees . Spray a 9-inch square baking pan with cooking spray.

2. In a large bowl combine the fruit with 1/2 cup sugar and orange zest. In a small bowl mix the cornstarch with the orange juice and add to the fruit. Pour into the prepared dish. Set aside.

3. Place the flour, baking powder, 2 tablespoons sugar and salt in the bowl of a food processor. Process to combine. Add the butter and milk and pulse until the dough comes together. Transfer the dough in a bowl. Break off pieces of the dough, flatten them, and place on top of the fruit. Use all the dough, but leave some of the fruit exposed. Sprinkle with the remaining 2 tablespoons sugar.

4. Bake for 40-50 minutes, until the top is golden brown and the fruit is bubbling. If the dough browns before the fruit is cooked, loosely cover with foil and continue baking.
