There is no need to peel the peaches for this delicious summer classic. No fresh fruit on hand? Frozen peaches and blueberries are a good alternative in this recipe.
Preheat the oven to 400°. Spray a 9-inch square baking pan with cooking spray.
In a large bowl combine the fruit with ½ cup sugar and orange zest. In a small bowl mix the cornstarch with the orange juice and add to the fruit. Pour into the prepared dish. Set aside.
Place the flour, baking powder, 2 tablespoons sugar and salt in the bowl of a food processor. Process to combine. Add the butter and milk and pulse until the dough comes together. Transfer the dough in a bowl. Break off pieces of the dough, flatten them, and place on top of the fruit. Use all the dough, but leave some of the fruit exposed. Sprinkle with the remaining 2 tablespoons sugar.
Bake for 40-50 minutes, until the top is golden brown and the fruit is bubbling. If the dough browns before the fruit is cooked, loosely cover with foil and continue baking.
