Spinach Fettuccine

Ingredients

  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 1 clove garlic, chopped
  • 8 ounces mushrooms, sliced
  • 2 green onions, sliced
  • 1/2 teaspoon dried tarragon
  • 1/2 teaspoon salt
  • 1/2 cup heavy cream
  • 1/2 pound spinach fettuccine, cooked
  • 1/4 cup grated Parmesan cheese

Make It

1. Heat oil and butter in large nonstick skillet. Add garlic, mushrooms, onion, tarragon, salt; saute 7 minutes. Add cream; cook 3 minutes. Add pasta; top with Parmesan. Makes 4 servings.
