Seashells with Salmon

  • 3/4 pound medium-size pasta shells
  • 1 cup frozen peas
  • 1/2 red bell pepper, very thinly sliced
  • 1/4 cup sliced green onions, (about 3)
  • 1 salmon fillet (10 to 12 ounces) or 2 salmon steaks (6 ounces each)
  • 2/3 cup reduced-fat sour cream, at room temperature
  • 2 tablespoons chopped fresh dill, plus extra sprigs for garnish
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Make It

1. Bring large pot of lightly salted water to a boil. Cook pasta according to package directions. Add peas, bell pepper, and green onion to pasta water 5 minutes before estimated cooking time is up.

2. Meanwhile, place salmon in a microwave-safe dish, flesh-side-down; cover with plastic wrap. Microwave on 50 percent power about 5 minutes, or until fishis cooked through. When it's cool enough to handle, remove skin and any bones and divide into about 1 inch pieces.

3. Drain pasta and vegetables, reserving 1/3 cup cooking water; transfer to large bowl. Toss pasta with sour cream, dill, salt, pepper, and reserved pasta water. Gently fold in salmon. Divide among 4 serving plates and garnish with dill.
