Penne with Cherry Tomatoes

For this quick and easy recipe, cherry tomatoes are sauteed with garlic before tossing them with pasta, fresh basil, and smoked mozzarella cheese.

Penne with Cherry Tomatoes

  • 3/4 pound penne
  • 1 tablespoon olive oil
  • 2 cloves garlic, finely chopped
  • 1 pint cherry tomatoes, halved
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 pound smoked mozzarella, diced
  • 1 cup packed fresh basil leaves, finely chopped

Make It

1. Cook penne in large deep pot of lightly salted water until al dente, firm yet tender. Drain.

2. Meanwhile, in large nonstick skillet, heat oil over medium heat. Add garlic; saute 1 minute. Add tomatoes, salt and pepper; saute 2 minutes.

3. Toss penne with tomato mixture, cheese and basil. Serve at once. Makes 6 servings.
