For this quick and easy recipe, cherry tomatoes are sauteed with garlic before tossing them with pasta, fresh basil, and smoked mozzarella cheese.
Cook penne in large deep pot of lightly salted water until al dente, firm yet tender. Drain.
Meanwhile, in large nonstick skillet, heat oil over medium heat. Add garlic; sauté 1 minute. Add tomatoes, salt and pepper; sauté 2 minutes.
Toss penne with tomato mixture, cheese and basil. Serve at once. Makes 6 servings.
