Pasta with Garlicky Roasted Broccoli

  • 6 cups fresh broccoli florets
  • 2 garlic cloves, finely chopped
  • 1/2 cup chopped walnuts
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 tablespoons olive oil
  • 12 ounces whole-wheat rotini pasta
  • 1/2 cup chicken broth
  • 2 tablespoons unsalted butter
  • 1/4 cup grated Parmesan cheese

Make It

1. Heat oven to 400 degrees F. Bring a large pot of salted water to a boil.

2. Combine broccoli, garlic, walnuts, salt and pepper in a medium-size bowl. Drizzle with olive oil and stir until coated. Place broccoli mixture on a large rimmed baking sheet and roast at 400 degrees F for 13 minutes, stirring twice.

3. Cook pasta following package directions, about 10 minutes. Drain and return to pot.

4. Add broccoli mixture to pasta pot and stir in broth, butter and Parmesan cheese. Serve immediately.
