  • 1 pound bow-tie or penne pasta
  • 1 jar (7 ounces) roasted red peppers, rinsed and drained
  • 1/2 teaspoon liquid red-pepper seasoning OR: ground black pepper
  • 1 can (14-1/2 ounces) chunky pasta-style tomatoes
  • 1 package (8 ounces) reduced-sodium mozzarella, cubed
  • 3 tablespoons grated Parmesan cheese

Make It

1. Cook pasta according to package directions.

2. Meanwhile, prepare sauce. Place roasted red peppers and red-pepper seasoning in food processor or blender. Whirl until smooth puree. Scape into serving bowl.

3. Add tomatoes, mozzarella and Parmesan to serving bowl. Add cooked, drained pasta, tossing to coat. Serve with additional grated cheese, if you wish. Makes 6 servings.
