Pasta Puttanesca

Ingredients

  • 1 chopped onion
  • 2 teaspoons canola oil
  • 1 teaspoon olive oil
  • 2 cloves minced garlic
  • 1 can (28 ounces) tomatoes, roughly chopped
  • 5 chopped anchovy fillets
  • 4 teaspoons capers
  • 1 tablespoon chopped black olives
  • 2 tablespoons fresh basil
  • cooked linguine

Make It

1. Saute onion in canola oil, olive oil until wilted. Add garlic, and tomatoes. Simmer, uncovered, 10 minutes. Add anchovy fillets, capers and black olives. Simmer another 10 to 15 minutes until thick; stir in basil. One serving is 2/3 cup tossed with 1-1/4 cup cooked linguine.
