No-Cook Tomato Sauce

Ingredients

  • 4 large tomatoes (about 2 pounds), diced
  • 2 cups chopped fresh basil
  • 1/2 cup shredded part-skim mozzarella cheese
  • 2 tablespoons olive oil
  • 2 tablespoons grated Parmesan cheese
  • 3/4 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 pound spaghetti

Make It

1. Combine tomatoes, basil, mozzarella, olive oil, Parmesan, salt and pepper in large bowl.

2. Meanwhile, cook spaghetti in boiling salted water according to package directions.

3. Drain pasta, reserving 1/2 cup cooking liquid. Add pasta and reserved cooking liquid to tomato mixture; toss to coat. Serve immediately.
