Meaty Lasagna

  • 2 teaspoons olive oil
  • 1 clove garlic, thinly sliced
  • 1/2 pound ground veal
  • 1 1/2 cups thick and chunky prepared low-fat marinara sauce
  • 1/3 cup packed fresh basil leaves
  • 1 container (8 ounces) low-fat (1 percent) cottage cheese
  • 1 egg yolk
  • 2 tablespoons seasoned bread crumbs
  • 1/4 cup grated Parmesan cheese
  • 3 no-boil lasagna noodles (such as Ronzoni, 6-1/2 x 3-1/2 inches each)
  • 1 cup shredded mozzarella

Make It

1. Heat oven to 375 degrees F. Place oil in 10-inch skillet over medium heat. Add garlic and cook for 1 minute. Add ground veal and continue to cook for an additional 4 minutes. Stir in marinara sauce and heat through, about 2 minutes.

2. Meanwhile, combine basil, cottage cheese, egg yolk, bread crumbs and 2 tablespoons of the grated Parmesan cheese in a small food processor. Pulse until basil is chopped and ingredients are well combined.

3. Line a disposable 8 x 3-1/2 x 3-inch foil loaf pan with nonstick foil. Place 1/2 cup of the meat sauce in bottom of the pan. Top with 1 noodle. Spread noodle with 1/2 of the cheese mixture and 1/4 cup of the shredded mozzarella cheese. Top cheese with 1/2 cup meat sauce and a second noodle. Press down gently. Spread noodle with remaining cheese mixture, then 1/4 cup shredded mozzarella cheese and 1/2 cup meat sauce. Top with last noodle, pressing down gently, and cover noodle with remaining 1/2 cup meat sauce, remaining 1/2 cup shredded mozzarella and remaining 2 tablespoons Parmesan cheese.

4. Cover pan with foil and bake in 375 degree F oven for 45 minutes. Uncover dish and continue to bake for 15 minutes, or until cheese is lightly browned and top is bubbly. Let stand at room temperature for 10 to 15 minutes before serving. Makes 2 servings.
