  • Stir in the thyme, salt, pepper, artichokes, tomatoes, tomato paste, olives and vinegar until well blended. Microwave, uncovered, on high power for 6 minutes, stirring the mixture once halfway through the cooking.

  • Stir the chicken chunks into the sauce in the dish. Microwave, uncovered, on high power for 10 minutes, stirring halfway through the cooking. Let stand for about 3 minutes.

  • Serve chicken over cooked orzo. Toss with 1/4 cup Parmesan. Garnish with 2 tablespoons Parmesan.
