Chocolate Silver-Dollar Pancakes

  • 1 cup 2% milk
  • 2 eggs
  • 1/3 cup packed light-brown sugar
  • 2 cups reduced-fat baking mix
  • 1/3 cup unsweetened cocoa powder
  • Bananas, maple syrup for serving

Make It

1. Combine milk, eggs and brown sugar in a blender; whirl until smooth. Sift together baking mix and cocoa powder. Add to blender and whirl to blend.

2. Heat a silver-dollar pancake skillet or a large nonstick skillet over medium heat. Coat with cooking spray.

3. Drop one generous tablespoon of batter for each pancake onto skillet. Cook until small bubbles form on top,about 1 to 2 minutes. Flip pancakes over and cook 1 to 2 minutes more, until browned. Remove from skillet and keep warm until all pancakes are cooked.

4. Serve with maple syrup and sliced bananas, if desired.
