Prep:
  • Line a 9-in square pan with parchment paper, leaving overhang on two sides. Melt 1 stick unsalted butter in a saucepan over medium-low heat. Add a 10-oz. bag marshmallows and stir until completely melted. Fold in 6 cups puffed rice sweetened crisp rice or quinoa cereal and ¼ tsp. Kosher salt to coat. With buttered hands, press cereal mixture evenly into prepared pan. Refrigerate for at least one hour, then use the paper to transfer the bars to a cutting board. Cut into 12 rectangular pieces.

Decorate:
  • Cut out a deep "V" shape on one of the shorter sides of each bar. Melt 1 lb. dark or white chocolate. Working one at a time, dip the end of a wooden ice-pop stick into chocolate and gently push two-thirds of the way into each bar. Use a mini offset spatula or spoon to coat one side of each bar in chocolate. While the chocolate is still wet, place split Oreos or Mini Oreos, cream-side up for eyes, use brown Reese's Pieces for eyeballs and cut a second orange Reese's in half for the nose. Add 2 sliced almonds or Honey Smacks cereal for wings. Refrigerate until ready to serve.

Alternatives:

Switch it up! Substitute the puffed rice cereal for puffed quinoa, which you can find in health food stores or here.

Microwave

In a glass bowl add butter and marshmallow. Heat in a microwave on high in 30 second intervals, stirring, until melted.
