In a large deep skillet bring 4 cups water to boiling. Add carrots; return to boiling. Reduce heat; cover and cook for 5 to 10 minutes or until tender. Drain and return to pan. Add orange juice, honey, and raisins. Bring to boiling; reduce heat. Simmer, uncovered, for 5 to 8 minutes or until liquid is syrupy and carrots are glazed. Serve topped with orange peel.
