Hangry kid? This noodle-happy soup takes only 20 minutes.
Bring chicken broth to a simmer over medium-high heat in a medium pot. Whisk in ginger and miso. Simmer for about 5 minutes. Add noodles and cook until al dente, about 3 minutes (or according to package directions).
In the meantime, divide chicken and spinach into four serving bowls. Using tongs, portion cooked noodles into the bowls. Ladle broth over the top and serve with green onions and hot sauce, if using.
