Mini Manhattan Crab Chowders

Ingredients

  • 2 tablespoons olive oil
  • 1/2 cup finely diced carrots
  • 1/2 cup finely diced celery
  • 1/2 cup finely diced onion
  • 2 cloves minced garlic
  • 2 teaspoons Old Bay seasoning
  • 2 1/2 cups chicken broth
  • 1 1/2 cups crushed tomatoes
  • 1 cup finely diced red potatoes
  • 8 ounces crab claw meat packed in water (such as Phillips)
  • 1/2 cup parsley, chopped
  • 2 teaspoons lemon juice
  • 2 teaspoons Tabasco
  • 1 teaspoon sugar

Make It

1. Heat oil in a pot over medium heat. Add carrots, celery and onion. Saute 6 to 8 minutes, stirring often, until softened. Stir in garlic and Old Bay; cook 1 minute. Add broth, tomatoes, potatoes and crab. Bring to a boil, then reduce to a simmer and cover with lid. Cook 10 minutes, until potatoes are tender. Stir in parsley, lemon juice, Tabasco and sugar. Serve warm in 3 oz shot glasses or small cups. (Note: This also makes 4 dinner portions.)
