1. In a microwave-safe bowl, combine 1 1/2 cups water and 1/2 cup orange juice. Cover with plastic wrap and microwave 4 minutes until simmering. Stir in 1 cup bulgur, 1/4 cup sweetened dried cranberries, 3/4 tsp salt and 1/8 tsp black pepper. Cover with plastic and let stand 35 minutes, stirring once. Stir in 2 cups diced cooked chicken, 1/2 cup walnuts and 3 tbsp chopped mint. Serve chilled or at room temp.
