Stacked Turkey Burger

Shredded zucchini added to ground turkey helps keep these burgers moist. Serve the meat in buns with lettuce, tomato, onion, and a special sauce that's similar to Thousand Island dressing.

Servings: 4 Prep 15 mins Broil 8 mins

  • 1/3 cup light mayonnaise
  • 2 tablespoons ketchup
  • 2 tablespoons sweet pickle relish
  • 2 teaspoons dried minced onion
  • 1 pound lean ground turkey
  • 2 zucchini (about 1/2 pound total), shredded (about 2 cups)
  • 1/4 cup unseasoned bread crumbs
  • 2 egg whites
  • 1/2 teaspoon black pepper
  • 4 hamburger rolls
  • 4 tomato slices
  • 4 onion slices
  • 4 leaves Bibb lettuce

Make It

1. Heat broiler. Coat a broiler pan with nonstick cooking spray.

2. In a bowl, stir mayonnaise, ketchup, relish and onion. Cover and refrigerate.

3. In a large bowl, stir turkey, zucchini, bread crumbs, egg whites, garlic salt and black pepper. Form into eight patties, about 3 ounces each and 4 inches in diameter. Place on the prepared broiler pan and broil for 4 minutes. Turn over and broil for an additional 3 to 4 minutes until nicely browned and cooked through.

4. Split rolls and place on a baking sheet. Toast lightly, about 30 seconds.

5. Place split rolls on work surface. Spread a generous tablespoon of sauce on both sides of each roll. Place a burger patty on each of the four roll bottoms. Layer each with a tomato slice, a second patty, onion slice and leaf of lettuce. Place roll tops on burgers and serve.
