Sausage "Risotto"

This risotto-style dish calls for Arborio rice but it's really more of a sausage and rice one-dish meal complete with mushrooms, peas, and tomato sauce. To completely cook the rice, be sure the mixture is simmering before you put it in the oven to bake.

Ingredients

  • 2 tablespoons olive oil
  • 1 cup chopped onion
  • 1/2 pound crumbled hot Italian sausage, skin removed
  • 8 ounces mixed sliced mushrooms
  • 1 1/2 cups Arborio rice
  • 1/2 cup white wine
  • 1 can (14-1/2 ounces) beef broth
  • 1 jar (16 ounces) marinara sauce
  • 2 cups hot water
  • 1 cup frozen green peas
  • 1/4 teaspoon each salt and black pepper
  • 1 cup Parmesan Cheese
  • 1/4 cup shredded fresh basil

Make It

1. Heat oven to 350 degrees F. In a large oven-safe pot, heat olive oil over medium-high heat. Add onion, crumbled hot Italian sausage, and mushrooms. Saute 6 minutes. Add Arborio rice; cook 1 minute. Add white wine and cook 1 minute. Add broth, marinara sauce, water, peas, salt and black pepper. Bring to a simmer. Cover; bake at 350 degrees F for 20 minutes. To serve, stir in Parmesan cheese and shredded fresh basil.
