1 head cauliflower cut into 1/2-inch-thick slices (pieces may break into large florets)
1 cup plain Greek yogurt
1 teaspoon curry powder
1/2 teaspoon salt
1. In a large bowl, mix yogurt, curry powder, and salt. Add the cauliflower and gently toss. Arrange the cauliflower on a large rimmed baking sheet coated with nonstick spray and bake at 400 degrees until tender, about 25 minutes.
