Easter Basket Cake

Ingredients

  • 1/4 18 ounce package refrigerated sugar cookie dough
  • 2 8 x 8-inch square cakes, from mix or favorite recipe, cooled
  • 1 1 pound can vanilla frosting
  • 3 tablespoons unsweetened cocoa powder
  • Assorted food paste colors
  • Baby Chick Cookies (see recipe on www.parents.com)

Make It

Make basket handle:

1. On well-floured surface, roll cookie dough out to 6-1/2 x 3/4-inch rope, adding flour as needed to prevent sticking. Shape into handle to fit basket. Bake with cake for 20 minutes, until golden.

2. Place 1 cake layer on work surface. Reserve 1/4 cup frosting for grass. Mix remaining frosting and cocoa powder in bowl. Spread top of layer with 1/2 cup cocoa frosting. Top with second layer. Cut square well in center of cake, 1-1/2 inches in from sides and 1-1/2 inches deep. Spread 1/2 cup cocoa frosting over sides and top of cake for base coat. Pipe remaining frosting in basket weave over cake.

3. Press handle into cake.

4. Tint reserved 1/4 cup frosting green with food color. With pastry bag fitted with grass tip, pipe grass on top and bottom of cake and around handle base.
