Divide hummus between crackers. Use a Y-shaped peeler to peel ribbons from the carrot and layer them on hummus. Use scissors to trim excess.
Slice beet, then cut small triangles from slices. Lay 7 triangles per cracker on top of the carrot ribbons to create the eyes, nose, and mouth. Cut two 1-inch stalks from the cucumber and place at the top of pumpkins along with herb sprigs.
