1. Plunge peaches into pot of boiling water for 1 minute. Drain. When cool enough to handle, peel and pit. Place peach flesh in processor or blender. Add lemon juice. Whirl until pureed.
2. Stir puree into chilled custard for ice cream (see Old-Fashioned Vanilla Ice Cream, Step 2, www.familycircle.com).
3. Freeze in ice-cream maker according to manufacturers directions. Transfer to bowl; cover and place in refrigerator-freezer. Makes about 7 cups.
