This is an excellent easy recipe to make with young kids. These blueberry muffins are light and fluffy and bursting with blueberries. I first saw this recipe in print in a May 2007 Parents magazine and made it the very next morning with my then 3 year old daughter. We all loved the blueberry muffins and I have been making them using this recipe for the last 13 years! I share this recipe with family, friends and colleagues with young kids. I make these muffins 2-3 times a month. They disappear quickly. I was so happy to see this recipe recently that I had to write a review. I follow the recipe exactly when making the batter. The only thing I do differently is that I preheat oven to 425 degrees F and bake for 8 minutes, then drop the oven temperature down to the original baking temperature of 375 degrees for the remainder of the baking time 9 minutes or until muffin top is golden brown. Baking the muffins at the higher temperature helps the muffins pop to produce taller rounded muffins with a fluffy soft center. You will love these easy to make blueberry muffins!
