1. Preheat oven to 350 degrees F. Coat a 2-qt. square baking dish with nonstick cooking spray. In a large bowl, stir together 8 lightly beaten eggs, 3/4 cup chopped zucchini, 1/2 cup chopped fresh seeded tomato, 1/4 cup crumbled cotija cheese, 1/4 cup chopped red sweet pepper, 1/4 teaspoon salt, and 1/4 teaspoon black pepper. Pour egg mixture into prepared dish. Bake 30 minutes or until set (160 degrees F). Let cool 10 minutes. Using a 3 1/2-inch heart-shaped cookie cutter, cut out heart shapes. Makes 4 servings.
