Ground turkey, lamb, or beef would also be delicious in these flavor-packed pockets.

Ground Pork and Plantain Empanada Filling

Ingredients

  • 2 teaspoons olive oil
  • 1 green plantain, chopped (1 1/4 cups)
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 teaspoon ground coriander
  • 1 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 pound ground pork
  • 1 14 1/2 ounce can diced tomatoes
  • 1/4 cup raisins
  • 1/4 cup pimento stuffed green olives, sliced
  • 1 recipe Basic Empanada Dough

Make It

1. In a large nonstick skillet heat olive oil over medium heat. Add plantains, onion, garlic, coriander, salt and pepper. Cook, stirring frequently, about 5 minutes or until onions are tender. Add ground pork and cook until no longer pink. Add tomatoes and raisins. Simmer 6 to 8 minutes or until the plantains are slightly tender. Add green olives and remove from heat. Let cool. Fill and bake as directed in Basic Empanada Dough recipe.
