  • In a large nonstick skillet heat olive oil over medium heat. Add plantains, onion, garlic, coriander, salt and pepper. Cook, stirring frequently, about 5 minutes or until onions are tender. Add ground pork and cook until no longer pink. Add tomatoes and raisins. Simmer 6 to 8 minutes or until the plantains are slightly tender. Add green olives and remove from heat. Let cool. Fill and bake as directed in Basic Empanada Dough recipe.
