In a food processor, combine chile, avocado flesh, garlic, salt, pepper, and 2 Tbs. oil. Give it a buzz until the texture of the sauce is smooth and creamy.
Drizzle in more oil as needed, and taste for salt and pepper. This will keep for about two days in the fridge.
