1. Whisk together 3 tbsp olive oil, 2 tbsp red wine vinegar, 1/2 tsp dried Greek seasoning and 1/8 tsp black pepper. Place 8 cups mixed salad greens in a large salad bowl and toss with dressing. Fold in 1 pound cooked shrimp and 1/4 cup each chopped pitted Kalamata olives and crumbled feta cheese. Serve with garlic herb pita chips (such as Stacy's), if desired.
