Greek Chicken Kebabs

Ingredients

For the tahini-yogurt sauce
  • 1/2 cup Greek yogurt
  • 2 tablespoons tahini
  • 2 tablespoons lemon juice
  • 1/4 teaspoon minced garlic
  • 1/4 teaspoon kosher salt
  • 2 tablespoons cool water
For the salad
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1/2 English cucumber, diced
  • 1 green bell pepper, diced
  • 1 heaping cup grape tomatoes, halved
  • 2 tablespoons fresh chopped parsley
  • Salt and pepper to taste
  • 1/4 cup crumbled feta
For the kebabs
  • 1 pound ground chicken
  • 1 onion, finely diced
  • 1/3 cup chopped parsley
  • 1/2 teaspoon cumin
  • 1/4 teaspoon pepper
  • 3/4 teaspoon kosher salt
  • 1/4 teaspoon smoked paprika
  • 8 six-inch bamboo skewers, soaked in water for 30 minutes

Make It

1. In a bowl, combine all sauce ingredients and whisk. Set aside.

2. In another bowl, whisk together olive oil and lemon juice for the salad. Toss with vegetables and parsley. Add salt, pepper, and feta.

3. Heat broiler with a rack set 6 inches below. In a bowl, toss together all kebab ingredients. Shape into eight 4-inch-long portions on a foil-lined baking sheet. Slide a skewer into each.

4. Broil until lightly seared on both sides and cooked through, about 4 minutes per side.
