In large resealable plastic bag, combine juice, honey, soy sauce, garlic and vinegar. Add hens, reseal and shake to combine. Place in refrigerator 3 hours or overnight.
Heat oven to 400 degrees F. Remove hens from marinade; place marinade in small saucepan. Place hens, skin side up, on broiler pan.
Roast hens at 400 degrees F for 20 minutes. While hens are cooking, bring marinade to boiling. Boil 10 minutes until slightly syrupy. Brush hens with some honey-orange syrup. Return hens to oven; roast 10 minutes longer or until instant-read thermometer registers 160 degrees F. If desired, run hens under broiler 2 minutes to crisp skin. Serve over Fruited White and Wild Rice. Makes 6 servings.
Prepare the 2 packages white and wild rice mix as package label directs. When done, stir in chopped scallions and drained mandarin oranges.
