Crispy French Toast

  • 1 egg
  • 2 tablespoons skim milk
  • 1/4 teaspoon vanilla extract
  • 1/4 teaspoon cinnamon
  • 2 slices whole-wheat bread
  • 3/4 cup berries of your choice (such as blueberries, raspberries, blackberries and/or strawberries)

Make It

1. Spray a nonstick skillet with nonstick cooking spray.

2. In a wide, shallow bowl, combine the egg, milk, vanilla extract and cinnamon, using a wire whisk.

3. Soak the bread in the egg mixture one slice at a time, then transfer to the prepared skillet. Cook over medium heat until crispy, about 2 minutes, then flip and cook the other side an additional minute.

4. To serve, top with berries.
