Heat oven to 350° F. Spread phyllo cups over a large baking sheet. Bake at 350° for 5 minutes.
In large bowl, combine Brie, figs and almonds. Toss to combine.
In a small bowl, whisk together honey, vinegar, thyme, salt and pepper. Pour over Brie mixture and toss to combine.
Spoon a small amount of Brie mixture into each cup, dividing equally among cups. Bake at 350° F for an additional 5 minutes. Serve warm.
